Recipe: How to make a quick, easy, and colorful roasted potato side dish.

One thing my entire family of four plus the majority of the world has in common is that we all LOVE potatoes.  I love me a sweet potato.  My hubby likes them smothered in mayo.  My daughter likes her potatoes mashed, and my baby boy is the king of tater tots!  While our favorites may differ, we all get excited for this easy side dish that I make regularly.  It's a mix of whatever potatoes I have on hand, smothered in some simple seasonings, and roasted until crispy!  Today I'll be sharing my recipe that's honestly so simple I shouldn't call it a recipe.

Recipe:  Colorful Roasted Potatoes Side Dish


Ingredients

(1) Bag of Confetti Potatoes

Note:  If this is difficult to find, mix together a few of your favorite types of potatoes.  I find this comes out better if you use the miniature potatoes like pictured below since they are more tender.

(1) Pound Sweet Potatoes
(1) Large Vidalia Onion, diced
(1/2) Cup Olive Oil
(1) Tbsp Garlic Powder
(1) Tsp Powdered Thyme
Salt & Pepper to taste

Directions

Preheat the oven to 375*.

Wash and cut all of your potatoes leaving the skin on into 1/4" pieces.  Place in a large bowl.  Add the diced onions to the bowl.  Pour the olive oil and all seasonings into the bowl.  Mix until all of the pieces of potatoes are evenly covered in seasonings and oil.  Pour potato mixture onto a cookie sheet and make sure it's evenly spread apart without any pieces on top of one another.  This will ensure that all of the potatoes are cooked evenly.  Stick in the oven and roast for 20 minutes.  After 20 minutes, mix the potatoes and try to turn them over as much as possible.  Roast for another 20 minutes or until the potatoes are crispy.  Enjoy!

  1. I've just bought first spring potatoes to roast tomorrow for lunch with some spinach pure for a sidedish. I do prefer them roasted as well, or fried. And also boiled and then mixed with stir fried onions. When I roast them in da oven I do like to put some dried dill over them, ads a nice flavour. Sometimes I will make hasselback potatoes too when I'm not hot and bothered, which isn't very often LOL Do you have that thingy that makes curls out of potatoes? Kids love that.

    1. ohh that sounds delicious! I'm not a huge fan of boiled or mashed potatoes, but will eat them if they're boiled in broth. My favorite are sweet potatoes! Never heard of hassleback potatoes. I'll have to go to the search engines for that one.. Curly fries are typically spicy over here. I'm not a fan of spice, so I'm not sure if my kids even know that they exist. I don't have the patience to curl them and make those homemade. :)

  2. This is my favorite way to eat potatoes, though I do love garlic mashed at restaurants. I used to hate red potatoes because I thought they had a funny (BAD) flavor, but I either got used to it or they’ve improved!

    1. Red potatoes are for roasting, white ones for cooking and mash as they have more starch.

    2. I prefer red potatoes over the white potatoes. The blue potatoes come with the confetti bag mix and I actually really like them! They're a harder consistency than the other potatoes which I like.
