Recipe: The best, easy to make Rice and Beans recipe.

With the 4th of July upon us, I'm sure that the majority of the US is planning their backyard celebrations!  The menus most likely consist of hamburgers, hot dogs, corn on the cob, grilled vegetables, and potato salad.  Our family's barbecues are similar, except we like to add a few extra things in there to keep it exciting.  It could be sausage & peppers or my grandmother's famous tortellini vegetable salad.  Whatever the wildcard dish is, there's one that's become expected at every BBQ I host.  That dish is rice & beans.

Rice & Beans Recipe

(2) cups uncooked rice
(2) 15 ounce can of black beans
(1) larger yellow onion, diced
(1) red pepper, diced
(2) tablespoons extra virgin olive oil
(1) tablespoon dried oregano
(1) teaspoon garlic powder
(1) teaspoon cumin
salt & pepper to taste

Add the uncooked rice to a rice cooker or pot with 5 cups of water and salt.  Cook all the way through.  In a large saute pan, heat up the olive oil on medium heat.  Saute the onions and red pepper until the onions are translucent, about five minutes.  Add both cans of beans to the pan.  After emptying out the contents of the cans, refill each can three quarters of the way with cold water and add to the pan.  Add all of seasonings to the pan.  Bring to a boil.  Reduce heat to low and let simmer for 20 minutes.  Thoroughly mix the beans with the rice.  Serve & enjoy!

Tip:  I've been using THIS rice cooker for the past 8 years with zero regrets.
This was honestly one of the best purchases I've ever made.  I use it about 3 to 4 times a week.  I've been doing that for the past 8 years and have had zero issues.  It's not fancy as reflected in the low price but it gets the job done well.

  1. Almost similar to the type of cuisine in my country. The difference is that black sticky rice is cooked until it thickens, then the serving is poured with thick coconut milk sauce.
    By the way looking at photos of this dish, I really want to eat again :)

  2. I've just made rice and zucchini risotto for lumch today. I will be baking yoghurt pie with shrooms tomorrow probably. When it is extremely hot I will just mix a can of beans with diced cucumber and some mayo and that's my lunch during summer heats.

  3. My kids always wanted pasta salad, which I don’t care for, at every family cook out. I’ve been making a different quinoa salad every week this summer and really loving it.

    I’m making shish kebabs for July 4th.

    1. I just ate a quinoa wrap and it was yummy!! You'll have to share your recipe for a quinoa salad. We make a pasta salad with tortellini, veggies, and an Italian dressing that's yummy. I don't really care for a pasta salad with mayo either.

  5. For us, it's also pasta salad like Bijoux. I just cook up some pasta, toss in some black olives and cubed mozzarella, sliced grape tomatoes, then pour on Italian dressing. Super easy and always gobbled up. The beans and rice sounds like something we should throw into the mix this year.

  6. You just made me think of my FIL. He was my "dad" after my dad passed when I was in my 20's. He would make Spanish black beans - oh so good! I use his recipe and the only real change from yours is Sazon and capers. Our other favorite: red beans and rice with sausage. To die for!! Whenever I make it the kids always talk about grandpa. I love the memories food can evoke.
