Recipe: Fresh Cranberry Sauce

Let's have a Thanksgiving Recipe Potluck!
If you e-mail me a recipe, I'll feature you on R&W this coming Wednesday.
**Please try to submit your recipes by 5pm, Tuesday night.**

In honor of Turkey day, let's share some recipes that are sure to impress your host.
I'm all for desserts from the bakery...
My growing waistline can attest to that!
...but, let's be a little more impressive and bring something simple for the main course.

Typically, we go to my grandmother's house for Thanksgiving.
We are Sicilian, so you can imagine the feast she prepares.
It's like a little piece of Sicilian heaven, plus a turkey.
I can't wait for that lasagna!

In attempt to Americanize our meals for the American holiday, I'll bring a few traditional dishes.
I'll make homemade cranberry sauce, garlic brussel sprouts and corn bread.
I won't share the cornbread recipe since I cheat and use Jiff box mix.  Shhh, don't tell!

Fresh Cranberry Sauce
I like it chunky, but feel free to change the consistency to how you like!

12oz Fresh Cranberries
1/4Cup Orange Juice
1Cup Sugar
1Cup Water

Mix the water, orange juice, and the sugar together in a pot.  Bring to a boil.  Add the cranberries and stir.  Bring the mixture back to a boil and cook for 15 minutes on medium heat.  Remove the pot from the stove.  With a potato masher, mash the mixture together.  Cover with saran wrap and refrigerate over night.
Madre used to strain the sauce to get all the clumps out.

What are your simple holiday recipes?

  1. lol recipe? What's that? I have no such word in my known language.

    1. Come on, cat...I know you can think of something!!!!

    2. Nope, not a thing. Chicken on George is the most I cook at my wing haha

    3. LOL! Come on now, Cat! I still think you can do better. I mean, you're able to eat fresh veggies, no??

    4. Chicken on George? Do share....I've never heard of that! ha.

    5. Yes, please share and ill post it!! Haha

  2. My stuffing is THE best....
We already had our Thanksgiving....will make the stuffing again at Christmas....
Roasted sliced Yams is another favorite....
    Have a great Thanksgiving....
    Linda :o)

    1. Sliced yams sounds yummy!!!! You should send the recipe. :)

    2. nothing to it Jax!
Olive oil in a roasting pan...slice the Yam in rounds..2" thick.. sprinkle more olive oil...sea salt...freshly ground black pepper...any herb that you like...turn once...350* for 40 minutes...YUMMY!

    3. Thanks for sharing. :) It sounds super yummy and very easy!

  3. This is embarrassing. I don't have any recipes. I remember when I was little though, I used to love this lasagna that my aunt made and I would look forward to it till we had a family gathering. One time I put a ridiculous amount of it on my plate, and everyone was like "you're never gonna finish all that!" and they were right... but oh well, it's not my fault the lasagna was so good.

    1. Oh how I love lasagna. I am pretty sure I would give Garfield decent competition. Lol

  4. well if it was Turkey day as in Turkey the country, I could do some belly dance :) but with turkey as a bird, I don't cook nor eat meat

    1. I will totally take the belly dance, Dez!!!! Lol love it!!

  5. Replies
    1. That's ok. But you should learn so your take out bill decreases. ;)

  6. I love your three choices...all favorites of mine! Yum! I want that lasagna, too!

I'll share a recipe! Do we put it here or email you? Photo or no?

    1. Thanks, Betsy!! You can email it to me, and if you have a pic, ill post that too. :)

  7. How is Mushyface? She is cute:)
This cranbery sauce sounds amazing relly I love cranberries!
Sadly we dont have thanksgiving but I love it!

  8. I only had cranberry sauce recently and liked it. This year, my boyfriend works 3:30-12:30 on Thanksgiving and I work 7:30-midnight. Then we both work again Black Friday. I'm pretty sure we'll be ordering pizza.

    1. Aw, I'm sorry to hear that your Thanksgiving dinner will be pizza. Maybe you two can cook up a Thanksgiving dinner on Sunday. Just pretend it's Thursday and you will never know. haha

  9. Do you do the full on Italian Thanksgiving with lasagna/pasta first and then traditional, American turkey and everything? My family does that and I swear, you gain 10 lbs. just looking at it!
I HATE cranberry sauce from the can, so I'm loving this recipe. Thanks for sharing, girl!
My Thanksgiving contribution is always a pumpkin dessert - this year I'm doing pumpkin cheesecake, pumpkin whoopie pies, and chocolate whoopie pies. Stressing already about where the time to make it all will come from!

    1. Yes, we do!! lol It's nothing compared to Christmas Eve though. Nothing scares my man, but the Christmas Eve feast makes him shake! lol!! It's like an annual challenge for him. lol!!

  10. All my recipes are what I like to call "bachelor cuisine". It requires finding anything in your fridge and/or pantry that won't make you sick if it's crammed together and eating until you're full. My favourite one is peanut butter spread on a slice of cheese with sultanas sprinkled on top. Sometimes a bit of honey too.

  11. Vampires is not at all like in the movies or books. Sure, I understand. You are young you have the whole world open to you. You can be anything that you choose if you apply yourself and try hard to work toward that goal. But being a Vampire is not what it seems like. It’s a life full of good, and amazing things. We are as human as you are.. It’s not what you are that counts, But how you choose to be. Do you want a life full of interesting things? Do you want to have power and influence over others? To be charming and desirable? To have wealth, health, and longevity, I can help you solve any problem you are having
    (1) If you want your ex back.
    (2) If you want to stop having bad dreams.
    (3) You want to be promoted in your office.
    (4) You want women/men to run after you.
    (5) If you want a child.
    (6) You want to be rich.
    (7) You want to tie your husband/wife to be yours forever.
    (8) If you need financial assistance.
    (9) If you want to stop your divorce.
(10 If you want to divorce your husband.
    (11) If you want your wishes to be granted.
